"Se ha estudiado la tolerancia al etanol de cinco especies de levaduras: S. cerevisiae y otras cuatro de posible aplicación biotenológica a corto y medio plazo. C.utilis, C. pseudotropicales, P.stipitis y K.marxianus ( Colección IGC).Como criterio básico de tolerancia hemos determinado la inhibición por etanol, de la tasa específica de fermentación. Asimismo se han aplicado dos métodos de cuantificación de tolerancia al etanol, basados en la alteración por este alcohol de la permeabilidad de la membrana plasmática en levaduras. Estos métodos han sido propuestos por Jiménez y van Uden (1985), Salgueiro y cols. (1988). Los resultados obtenidos muestran que las cuatro estirpes diferentes de Saccharomyces, se incluyen en el grupo de tolerancia a etanol media-baja.
